Fast, Low Fat Veggie Lasagna

If you haven’t noticed yet, we like our pasta around here. We try to choose healthy options when available. One of the great things about making your own lasagna is that you know exactly what you’re putting in it. This recipe uses a mixture of pre-shredded, low-fat cheeses available, whole wheat lasagna noodles, frozen spinach, sauteed onions and peppers and fresh herbs. About half an hour later you have a hot, healthy, ooey, gooey pile of excellent lasagna. This makes 4 generous servings (forget the sides, you won’t have room!) and reheats like a dream. Vegetarian Tortellini with Spinach and Chickpeas

This dish makes a super quick, delicious, healthy dinner for the lacto-ovo vegetarians out there. With prepackaged and canned ingredients this dish comes together super fast. The tortellini takes the longest to cook at about 10 minutes and while that’s cooking the spinach is heating in the microwave, the sauce and chickpeas are heating on the stove and before you know it everything’s done and it’s time to eat. This made about 3 servings. Enough for my husband and I for dinner with enough left over that I could have it for lunch a few days later. Sweet Potato Burritos

This sounds strange and vaguely unpleasant to a lot of you, I know, but stick with me here. Despite the odd ingredient, these are really good. Hearty and filling with just a touch of spicy heat. You don’t really notice the sweet potato so much or the lack of meat. These were unanimously declared a winner around here; even the dogs got a bit of the action as I could only manage one and a half. Breading for chicken, pork, lamb, etc

This is a really great breading for any meat you choose.  We like this on chicken and pork especially, but my husband also says he’d like to try it on lamb sometime.  Don’t let the addition of the cinnamon fool you!  It’s a tiny amount, but it does big things for the overall flavor experience.  The end result is a crunchy, tasty breading that, if baked, is relatively healthy. Easy Chicken Quesadillas

Corn Chowder

This is a great chowder to make in huge batches and freeze. It freezes fairly well and can also be kept in the fridge for a week or so and eaten off of. The first couple of batches I made were gone in mere days. We couldn’t get enough of it!  Now we keep a container or two in the freezer at all times.  It makes a quick, healthy, delicious dinner and all you need is a microwave!
