They look good, don’t they? Know what else thinks they look good? Your heart! These cookies have little sugar in them and lots of whole grains. This recipe makes 6 dozen, but don’t let that fool you, that’s for the two-bite version. If you make regular sized cookies you’ll probably get around half that. My husband adores banana pudding. His dad made it frequently when he was growing up. I like it myself so I decided to try to cobble together a relatively healthy version. The other day I was browsing recipes online, as I’m wont to do, when I came across this recipe for Lemon Cream Cake. It sounded fantastic, but very unhealthy, so I decided to try to make it healthier while still retaining the luscious decadence of cake.
