Sweet Potato Burritos

This sounds strange and vaguely unpleasant to a lot of you, I know, but stick with me here. Despite the odd ingredient, these are really good. Hearty and filling with just a touch of spicy heat. You don’t really notice the sweet potato so much or the lack of meat. These were unanimously declared a winner around here; even the dogs got a bit of the action as I could only manage one and a half. New Addition to the Site!

Hi folks, I’ve been busy cooking, baking and creating new and wonderfully healthy recipes to share. I’m also working on a new site feature that will be unveiled in coming months (it’s a big project) and I’m now introducing Subscriber Only Content. Here I’ll put recipes that aren’t listed on the site. All you have to do is subscribe for content updates, either via email (updates-subscribe@cooking4two.net) or RSS feed (look to your right, click that big orange square).

Right now I have a whopping one recipe and a list of my very favorite, and fruitful, ways to save or find cash. I’ll continually be adding exclusive content to the page and as long as you’re a subscriber you’ll have access. The one recipe in the section now is a dilly. It’s a brownie recipe full of complex carbs, good fats, and fiber. Nutrition information is also included. They were really great - fudgy, moist, rich and utterly decadent, or so you’d think upon tasting them. The recipe makes a 9×13″ pan which sounds like a lot, but trust me, these don’t stick around very long.

I’m also in the process of changing hosts and moving another blog of mine to a new server as well as to its own domain, it’s a lot of work, but worth it, I think. I’m sure having fun!


Steamed Broccoli

Wait, I know, but stay with me here even if you consider broccoli your arch nemesis. This is actually a really good way to cook up some broccoli quickly and painlessly. Use any veggie you like if the idea of eating the tiny sexual organs of flora turns your stomach. If you don’t have a steamer use a microwave safe bowl and some plastic wrap with a couple tablespoons of water. Serving sizes are tricky. My husband and I love steamed broccoli and I make enough for 4 when I make it, but somehow we manage the entire recipe between the two of us. Breading for chicken, pork, lamb, etc

This is a really great breading for any meat you choose.  We like this on chicken and pork especially, but my husband also says he’d like to try it on lamb sometime.  Don’t let the addition of the cinnamon fool you!  It’s a tiny amount, but it does big things for the overall flavor experience.  The end result is a crunchy, tasty breading that, if baked, is relatively healthy. Banana Pudding!

My husband adores banana pudding. His dad made it frequently when he was growing up. I like it myself so I decided to try to cobble together a relatively healthy version. The Lemon Cake Experiement

The other day I was browsing recipes online, as I’m wont to do, when I came across this recipe for Lemon Cream Cake. It sounded fantastic, but very unhealthy, so I decided to try to make it healthier while still retaining the luscious decadence of cake. Whole Wheat Yeast Rolls

100% whole wheat flour, 100% healthy, 100% delicious.  This recipe makes a ton of rolls. You have a couple choices with the leftovers. You can bake them as usual and freeze them or you can freeze balls of dough before the final rise and thaw and use them as usual. If you have a bread machine most of the work is done for you!
